4 Frendz, LLC. in Clarkston, Washington is recalling approximately 497 pounds of Southfork Sausage brand beef jerky products due to under-processing that may allow bacterial pathogens to survive in the products. The affected items are 3-ounce vacuum-packed packages in five varieties: Mesquite Pepper, Honey, Mesquite, Teriyaki, and Hot Honey flavors. These products were produced between August 10, 2015 and April 11, 2016, and bear establishment number EST. M22017 on the USDA mark of inspection. The items were shipped to retail locations in Idaho and Washington with use-by/sell-by dates ranging from May 10, 2016 to January 11, 2017. The problem was discovered during a U.S. Department of Agriculture Food Safety and Inspection Service (FSIS) inspection, and no confirmed cases of illness have been reported.

The problem was discovered during a comprehensive FSIS Food Safety Assessment (FSA) inspection performed in the establishment by an FSIS Enforcement Investigations and Analysis Officer.
